Memorial Weekend BOGO Sales Pt. 2

Soooo many BOGO sales for memorial day weekend!!

Memorial Weekend BOGO Sales!

The memorial weekend sales are starting off so good so I wanted to share two of my favorite retailers! Target is doing BOGO sandals and swim for the family and I'm sharing my favorites for women and toddlers below. They also have my favorite shorts on sale for $12!




Also, Aerie is having a huge sale (I've never seen one this good) on their swimwear. It's all BOGO! Aerie has my favorite swimwear BY FAR! Their swimwear is flattering on all body shapes and they're such a good body conscious brand. Linking my favorites below.

Watermelon Recipes

Watermelon is one of my favorite summer foods and I love using it for different recipes. It's also fairly low cal which is even better. I'm posting a few of my favorite recipes for the memorial day weekend!
Watermelon and Valentina Seasoning-one of my fav healthy snacks

Watermelon/Mint Salad
-Large bowl of cubed watermelon (usually half a watermelon works)
-1/2 cup crumbled feta
-Juice from one lime
-Handful of mint leaves

Cube your watermelon and then top with the feta/lime/mint, it's super easy and super yummy

Watermelon Salad (one of my favorite summer lunches, good for parties too you'll just need to add to the quantity)
-Spring mix lettuce
-Handful of cubed watermelon
-Handful of crumbled feta
-Handful of shaved almonds
-Handful of mint leaves
-Handful chopped asparagus
-Handful shredded carrots
-4 oz grilled chicken seasoned with garlic salt
-Salt/Pepper
-1 to 2 tbsp of olive oil
-1 to 2 tbsp of balsamic

Wash your veggies and mix it all up!

Watermelon Juice
-Just blend cubed watermelon! You can add ice to make it a watermelon slushy. This is such a refreshing, low cal juice. Use as much as your blender can hold.

Watermelon Sorbet
-3 to 6 cups of cubed watermelon (freeze overnight), amount depends on how much your blender or food processor can hold. A food processor works better.
-Fresh lime juice, use half a lime for every 3 cups of watermelon

Just mix this all up in your processor or blender on a slow setting and eat right away!

Another Watermelon Salad Option
-Large bowl of cubed watermelon
-Lime juice from one lime
-Season with Tajin seasoning to taste (I also like the Valentina chile lime seasoning)

Mix it all up, this is one of my FAVORITES!

Last Minute Mother's Day Gift Ideas

Today I am sharing some last minute gift ideas for Mother's Day 2020! However, these are not physical gift items- I am putting together a list of quality activities you can do with your mom on Mother's day, even virtually. Once I bought my mom and I a Design by Wine night (painting and wine) for Mother's Day and that was both of our favorite gifts. Quality time is so much more special than a physical item.

If you're able to see your mom on Mother's Day then here is my list of fun activities to surprise her with:

-Design by Wine at home! You can do a drive up order at Target to get some craft items, pick up a bottle of wine, and then either do your own crafts or YouTube something new.
-Stop by and make your mama breakfast (or dinner). My dad is cooking for both of us all weekend and we are thrilled, lol.
-Have a movie night! You can still rent new movies right now and stream them on your TV even though theaters are closed. Bring some drinks/popcorn/candy and you've got yourself a fun night.
-Game night is one of my favorite things to do if you have board games. Then the whole family can get involved!
-Wine and a fire! Mom and I are doing this, this weekend with their outdoor fireplace. Target also has some really affordable fire pits. Add s'mores too if she loves sweets!
-Work on a scrapbook together. This is another item you can do a drive up order at Target for (or Walmart). Then you can go through old family pictures and make a scrapbook. This is something really special to do with your mama.

If you aren't able to see your mom on Mother's Day then you'll have to go the virtual route!

-You can have a Zoom happy hour because who doesn't like happy hour. You can always drop off her favorite drink beforehand to surprise her.
-You can also do a virtual game night with the whole family which is a ton of fun!
-Send flowers- this is an obvious one if you aren't able to be around each other. Most local companies are doing social distancing deliveries too and it really helps them.
-Drop off some kind of gift basket for her. Again, Target drive up coming in clutch here. You can make a spa basket to drop off so she can spoil herself. You also may be able to do rush shipping today, I'm not sure.

Mother's Day 2020 is not normal this year but that is no reason to not find a way to make the best of it and spoil your mama!

Quick and Easy Taco's and Sides

Happy Cinco de Mayo and Taco Tuesday!! I am sharing my go to Taco/Rice/Bean/Guac recipe that I use all the time and it's very quick and easy.

TACOS

You can grab any veggies or meat you enjoy, this is just usually what I use. Feeds about 3-4.

INGREDIENTS
-Four large chicken breasts
-Olive oil
-Salt and pepper
-Two/Three jalapeño's depending on size chopped small
-Half white onion chopped small
-Shredded cabbage (half a head of cabbage is more than enough)
-One pack Taco seasoning (I like the liquid kind you'll find it with the dried taco seasoning too and it's the garlic and chipotle one)
-Corn or small flour tortillas whatever you prefer
-Shredded cheese
-Salsa (I really need to start working on a salsa recipe but for now canned will do)
-Limes for the juice
-Any other toppings you see fit

PROCESS
-I dice up the chicken breasts in small cubes first
-Line your pan with a light amount of olive oil and then add chicken on medium heat, cook chicken until at least the outside looks cooked then add taco seasoning
-Add in onion and jalapeño and cook until chicken is done and veggies are somewhat soft (some people like them softer than others) salt and pepper everything
-Keep your chicken/veggies in the pan to keep them warm and heat up a flat pan to warm your tortillas (you can make the corn ones into shells but I don't usually like hard shells) be very careful to flip the tortillas before they burn
-Fill your mean/veggie mixture in your tortillas then top with cabbage, cheese, lime juice, and salsa or anything else you see fit!

GUACAMOLE

You can also do just avocados and pre-made pico de gallo for an easy mix. I would still add garlic salt and lime to that.

INGREDIENTS
-Four to five avocados depending on the size
-Two to three jalapeños finely chopped
-Half white onion chopped
-One to two roma tomatoes cubed
-1/4 to 1/2 bundle of cilantro chopped
-Garlic salt
-Pepper
-Limes for the juice

PROCESS
-Mash your avocados in a bowl, leave one pit in there for freshness
-Add in all chopped veggies and mix
-Garlic salt/pepper/lime to taste

REFRIED BEANS AND RICE

Honestly I make this part as easy as possible and it's still good, lol.

INGREDIENTS
-One large can of refried beans
-3 cups of minute white rice (you can also find easy cook Spanish rice but I like this better)
-2-4 tbsp Tomato bouillon

PROCESS
-For the beans I heat them in a pot on the stove and add a small amount of water to keep them from burning
-Once they've cooked for about two minutes (the water should be mostly mixed into the beans) then I add 1-2 tbsp of tomato bouillon and cook until ready
*Warning- the bouillon is strong and very salty so add according to your taste buds
-For the rice I cook it based on box instructions (mine says add water over rice, cook in microwave for 5 minutes) then I drain any left over water once it's done
-Add in 1-2 tbsp of tomato bouillon and stir (again add to taste, it's strong)

BAM, this is one of my go to meals even not on Taco Tuesday because it is so quick and easy. It is also relatively healthy if you watch your portions. Enjoy!
