Quick and Easy Taco's and Sides

Happy Cinco de Mayo and Taco Tuesday!! I am sharing my go to Taco/Rice/Bean/Guac recipe that I use all the time and it's very quick and easy.

TACOS

You can grab any veggies or meat you enjoy, this is just usually what I use. Feeds about 3-4.

INGREDIENTS
-Four large chicken breasts
-Olive oil
-Salt and pepper
-Two/Three jalapeño's depending on size chopped small
-Half white onion chopped small
-Shredded cabbage (half a head of cabbage is more than enough)
-One pack Taco seasoning (I like the liquid kind you'll find it with the dried taco seasoning too and it's the garlic and chipotle one)
-Corn or small flour tortillas whatever you prefer
-Shredded cheese
-Salsa (I really need to start working on a salsa recipe but for now canned will do)
-Limes for the juice
-Any other toppings you see fit

PROCESS
-I dice up the chicken breasts in small cubes first
-Line your pan with a light amount of olive oil and then add chicken on medium heat, cook chicken until at least the outside looks cooked then add taco seasoning
-Add in onion and jalapeño and cook until chicken is done and veggies are somewhat soft (some people like them softer than others) salt and pepper everything
-Keep your chicken/veggies in the pan to keep them warm and heat up a flat pan to warm your tortillas (you can make the corn ones into shells but I don't usually like hard shells) be very careful to flip the tortillas before they burn
-Fill your mean/veggie mixture in your tortillas then top with cabbage, cheese, lime juice, and salsa or anything else you see fit!

GUACAMOLE

You can also do just avocados and pre-made pico de gallo for an easy mix. I would still add garlic salt and lime to that.

INGREDIENTS
-Four to five avocados depending on the size
-Two to three jalapeños finely chopped
-Half white onion chopped
-One to two roma tomatoes cubed
-1/4 to 1/2 bundle of cilantro chopped
-Garlic salt
-Pepper
-Limes for the juice

PROCESS
-Mash your avocados in a bowl, leave one pit in there for freshness
-Add in all chopped veggies and mix
-Garlic salt/pepper/lime to taste

REFRIED BEANS AND RICE

Honestly I make this part as easy as possible and it's still good, lol.

INGREDIENTS
-One large can of refried beans
-3 cups of minute white rice (you can also find easy cook Spanish rice but I like this better)
-2-4 tbsp Tomato bouillon

PROCESS
-For the beans I heat them in a pot on the stove and add a small amount of water to keep them from burning
-Once they've cooked for about two minutes (the water should be mostly mixed into the beans) then I add 1-2 tbsp of tomato bouillon and cook until ready
*Warning- the bouillon is strong and very salty so add according to your taste buds
-For the rice I cook it based on box instructions (mine says add water over rice, cook in microwave for 5 minutes) then I drain any left over water once it's done
-Add in 1-2 tbsp of tomato bouillon and stir (again add to taste, it's strong)

BAM, this is one of my go to meals even not on Taco Tuesday because it is so quick and easy. It is also relatively healthy if you watch your portions. Enjoy!
